Prep Time:10 mins
Cook Time:25 mins
Total Time:35 mins

  • 6 medium fresh peaches sliced
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1/2 cup vegan butter melted
  • Topping
  • 1/2 cup vegan butter melted
  • 1/2 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup light brown sugar

  • Preheat your oven to 175 degrees Celsius or 350 degrees Fahrenheit.
  • To make your peaches - in a bowl, mix together the sliced peaches, butter and the two types of sugar.
  • Pour the peaches into a rectangular oven dish. Mine is 4 x 7 inches.
  • Now, move onto making the pastry topping - in a large bowl mix together the butter, sugar, flour, baking powder and salt until mixture sticks together. You can do this via hand or by using a stand mixer. Layer the pastry on top of the peaches, you can do this in one smooth layer or in pieces like below.
  • Sprinkle the top with the brown sugar.
  • Oven bake for 20-30 minutes or until the top is golden in colour. Then serve while hot with vanilla ice cream.
