Peaches
6medium fresh peachessliced
1/2cupgranulated sugar
1/2cuplight brown sugar
1/2cupvegan buttermelted
Topping
1/2cupvegan buttermelted
1/2cupgranulated sugar
1cupall-purpose flour
1teaspoonbaking powder
1/4teaspoonsalt
1/2cuplight brown sugar
Instructions
Preheat your oven to 175 degrees Celsius or 350 degrees Fahrenheit.
To make your peaches - in a bowl, mix together the sliced peaches, butter and the two types of sugar.
Pour the peaches into a rectangular oven dish. Mine is 4 x 7 inches.
Now, move onto making the pastry topping - in a large bowl mix together the butter, sugar, flour, baking powder and salt until mixture sticks together. You can do this via hand or by using a stand mixer. Layer the pastry on top of the peaches, you can do this in one smooth layer or in pieces like below.
Sprinkle the top with the brown sugar.
Oven bake for 20-30 minutes or until the top is golden in colour. Then serve while hot with vanilla ice cream.
