Vegan peanut butter cups

These vegan chocolate peanut butter cups are made using less than 5 ingredients, are quick and easy to make and are the perfect treat for peanut butter fans. Warning: these are deliciously moreish you won't be able to stop at just one.

These vegan peanut butter cups are the perfect treat for chocoholics and peanut butter fiends. And you won't find a simpler dessert to make. The inclusion of salt, really helps highlight and bring out the flavours in these peanut butter cups.

🥘 Ingredients

  • Smooth peanut butter
  • Vegan dark chocolate
  • Salt

🔪 Instructions

Line a muffin tray with your paper cases.

Place half your chocolate into a microwaveable bowl with 1/2 a teaspoon of the salt and heat in the microwave in 20 second bursts, stirring after each burst until the chocolate is fully melted.

Fill each paper case with your melted chocolate until they are about a quarter full.

Place in the fridge for twenty minutes or until the chocolate has set.

Meanwhile, place your peanut butter in a bowl and microwave for 30 seconds or until your peanut butter is runny and easy to pour.

Add to the cases until the paper cases are 3/4 full.

Return to the fridge for a further twenty minutes to set the peanut butter.

Now we need to melt the rest of the chocolate, just follow the steps from earlier, not forgetting to add the remaining 1/2 teaspoon of salt.

Fill the cups with the remaining chocolate and return to the fridge a final time. Once chocolate has set they are ready to enjoy!

💭 Top tips

Make sure to set each layer before moving to the next. If each layer isn't fully set they'll ix together and you won't get the tasty layers.

📖 Variations

Swap the peanut butter for almond butter if that's your preference. If you want more chocolate and less peanut butter feel free to increase the amount of chocolate and decrease the amount of peanut butter?

👪 Scaling the recipe

The quantities in this recipe creates 6 peanut butter cups but it scales up easily. Just double or triple the quantities to make 12 or 18 cups.

Can it be made in advance? How is it stored?

Yes, store them in a container in your fridge for up to seven days. They can also be frozen for up to 3 months, just defrost them in the fridge for 3-4 hours before consuming.
