Vegan Key Lime Cupcakes

These key lime cupcakes are the perfect mix of sweetness and tartness. The perfect summery treat and of course vegan.

These tangy little cupcakes are perfect now that the weather is hotting up. These are also very light with a fluffy inside and a soft creamy frosting on top.

I've used key limes in this recipe, they are similar to normal limes but they are also smaller and sweeter. But if you can't get your hands on them, this recipe also works well with normal limes.

🥘 Ingredients

  • 4 ounces vegan butter
  • 3/4 cup granulated sugar
  • 3 flax eggs
  • 2/3 cup plant milk
  • 2 tablespoons key lime zest
  • 3 teaspoons key lime juice
  • 1 3/4 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt

🔪 Instructions

  • Preheat your oven to 350°F/180°C and grease a 12-muffin tin with a layer of butter and a little flour.
  • Add the butter and sugar to a large bowl and beat with an electric mixer until light and pale.
  • Add the flax eggs and beat until thoroughly combined.
  • Add the milk, key lime juice and beat until all combined.
  • Add the flour, baking powder and salt and beat until smooth and lump-free.
  • Use an tablespoon to divide your cake mix between your muffin moulds. It should fill each mould to about two thirds full.
  • Put in the oven and bake for 20 minutes until each cake is a light golden colour and a knife tip inserted in the middle comes out clean.
  • Let cupcakes cool on a wire rack.

📖 Variations

Swap out the key limes for ordinary limes, you may want to add a little more sugar to replace the sweetness.

👪 Serving size

The quantities in this recipe creates 12 cupcakes but it scales up easily. So just double the quantities to make 24 and triple to make 36.
