Vegan apple pie
This delicious vegan apple pie has a soft, buttery, crumbly base and inside you'll find a sweet, tangy fruity apple filling.
Apple pie is the ultimate comfort food and when I went vegan I wanted to figure out a way to still enjoy one of my favourite desserts. The biggest challenge was perfecting the pastry. It needed to be buttery and flakey but not go soggy when the apples are added. In, this recipe I've perfected it and the result is a totally delicious but easy to make apple pie.
Ingredients
- All-purpose flour
- Granulated Sugar
- Sea salt
- Vegan butter
- Water
- Apples
- Lemon
- Cornstarch (cornflour)
- Coconut oil
- Cinnamon
How to make my apple vegan pie
Make the crust: In a bowl, mix together the flour, sugar, and salt.
Add the butter to the bowl and mix it into the flour with a wooden spoon.
Add the water and mix just until the dough clumps together.
Roll into a ball. Wrap in cling film and chill in the fridge for an hour.
Preheat the oven to 350˚F (180˚C).
Peel and core the apples, then slice. Add the apples to a bowl and add the sugar, lemon zest, cornflour, lemon juice, 1 tsp melted coconut oil, salt, and 3 teaspoons of the cinnamon.
Combine until the apples are coated. Set aside.On a floured surface, roll out the dough till they're about 1 inch thick. Place into a greased 8-inch baking tin and press into the bottom and sides. Remove any excess dough from the edges, and prick the bottom with a fork.
Pour the apples into the bottom. Trim any excess dough from the edges. Brush the top with coconut oil and sprinkle with the remaining sugar and cinnamon. Bake for 1 hour until golden brown.Enjoy!
Substitutions
In this recipe I've used granulated sugar but you could also use coconut sugar, caster sugar or jaggery.
The apples in this recipe could be replaced with pears or even sliced peaches. The only limit is your imagination.
The cinnamon can be omitted or substituted. Nutmeg makes a good replacement for those of you who aren't a fan of cinnamon.
