The perfect vegan donut

These vegan donuts are easy to make, taste delicious and are great for those on a budget. Make your own vegan donuts at home that taste better than shop bought ones with an endless array of flavours.

You'd find it difficult to find anyone who doesn't love donuts. They are the perfect sweet treat - a crispy outer with a soft inside. I topped mine with melted chocolate and sprinkles but the varieties you can create are endless. Maybe you're a purist and like them coated in sugar or you share my motto that everything is better with chocolate.

🥘 Ingredients

1 1/4 cup warm soya milk
7 grams of active dry yeast
1/4 cup + 1 teaspoon sugar
6 tbsp of vegan butter
1 tsp salt
4 cups of all-purpose flour
Oil for frying (I use vegetable oil)

🔪 Instructions

In a bowl whisk together the milk, yeast, and the teaspoon of sugar. Set aside for 5 minutes, until frothy.

In a separate bowl, mix together the butter and the rest of the sugar until it resembles buttercream.

Add the salt.

Slowly add the yeast mixture to the butter/sugar mix and beat at he same time. If it starts to curdle, add a little of the flour.

Alternate between adding the yeast mix and the flour.

When the dough becomes too dense to miz finish off adding the yeast and flour using your hands.

By the end you'll be left with a soft dough.

Move to a floured surface and knead with your knuckles and fingertips for 5 mins until your dough has an elastic texture.

Use a pastry brush to lightly oil a bowl, transfer your dough to it, cover with oiled clingfilm and rest in a warm place for an hour until the dough has doubled in size.

Remove the dough from your bowl, punch the air out of it and use a roller to flatten the dough till it is about an inch thick.

Use your donut cutter to cut out the shape.

Transfer to a lightly oiled tray and let rise in a warm place for a further 30 minutes.

Your donuts should now be 3-4 inches high and are ready to be cooked.

Heat up your oil in a large pan, you'll need enough oil for deep frying.

The oil should be heated up to around 350 degrees. Cooke ach donut for 1-2 minutes each side, until golden in colour.

Remove from the oil, pat with kitchen paper and add your desired coating or topping.

💭 Top tip

Buy a donut cutter. It makes the job much easier but if you don't have one, use the rime of a mug for the outer shape and a bottle lid for the inside.

📖 Variations

Mix up your toppings and coatings for the best results. You can use any plant-based milk, it doesn't have to be soya milk.

The quantities in this recipe creates 12 donuts, so just double the quantities.

No, these are best made and consumed the same day, but they can be stored in an airtight container for up to 2 days. They can't be frozen.
