This delicious berry and thyme flavoured gin cocktail is the perfect drink for sipping in the summer. This unique combination of ingredients creates a drink that’s hugely refreshing and it tastes good sans alcohol too!
Here in the UK the weather has been glorious which has made quarantine a little easier to handle. After 6 weeks stuck at home the sunshine has been a welcome sight. It’s only spring but it feels like summer.
When the weather is great, and with plenty of time on my hands, I’ve been experimenting with gin cocktails and this one is my latest creation. There’s nothing better than relaxing in the garden, gin cocktail in hand. We’ve been using our inflatable hot tub a lot too and this is the perfect accompaniment.
This recipe calls for just a few key ingredients – berries of your choice. I used raspberries for mine but any type of berry works. You are also free to use frozen berries for this recipe, just let them thaw a little first. They don’t need to be entirely thawed as we’ll be mashing up the berries later.
Of course, you’ll also need some gin. Just plain gin is needed. Don’t use flavoured gin as it’ll change the taste.
Sugar syrup, you can buy this ready made or just mix some granulated sugar with hot water to create a syrup.
Fresh thyme is vital for this recipe! Fresh thyme freezes well so feel free to keep your thyme in the freezer and just take out as much as you need.
Soda water – if this recipe isn’t quite sweet enough for you, feel free to replace the soda water with lemonade.
This gin cocktail recipe takes about 5 minutes to make so it is a quick and easy summer cocktail.
Add your berries of choice, lemon juice and thyme to a bowl, glass or cocktail shaker and using the end of a rolling pin, mash up the berries.
Stir in the gin and sugar syrup.
Place a few ice cubes into a glass.
Strain the berry mix into the glass.
Top with soda water.
To garnish, add a couple of the berries and a few sprigs of thyme.
