Easy vegan salad - 'halloumi', avocado and rocket

This light and tasty vegan salad is filling, nutritious and quick and easy to make. The best part is that it is easy to modify to suit your tastes.

Ingredients

For the salad:

  • 2 large handfuls of arugula (rocket)
  • 5 large radishes, sliced
  • 2 avocados, cubed
  • 1┬álarge red onion, sliced
  • 1 tin of chickpeas, drained
  • 1 block of vegan halloumi, sliced into 1-inch pieces

To dress

  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 lemons, halved
